Oatmeal Lace Cookies
(Makes about 8 large ones)

50 g (about 3.5 tbsp) coconut oil
1/2 cup (1 dl) sugar (I used coconut sugar)
1 cup (2 dl) old fashion rolled oats
1 tbsp flour (I used coconut flour)
1 tsp baking powder
1 tbsp cinnamon (optional)
1 egg or egg replacer (I used replacer)

Melt the oil in the pot together with the sugar. Take off the heat. Add the rest of the ingredients stirring fast so it won't stick to the bottom. Scoop the dough by the tablespoonful onto a parchment-lined baking sheet and push the top of the dough to flatten just slightly. Bake 5-7 mins in 385 fahrenheit oven (200 celsius). Let cool and enjoy with a cup of hot tea.
