When I don't have much food in the house I like to throw together a quick stir-fry. Things you can almost always find in our home are some sort of greens and quinoa or rice. This time I made mustard greens with quinoa, onion and cashews. You just "wok" all the ingredients together in some coconut oil until mixed and greens are cooked enough. Flavor with good quality salt, garlic, chili and soy or tamari sauce (or Bragg's liquid aminos!). If you want to add cashews, add them at the very end so they stay crunchy.
Here I threw some kale and sprouts salad on top of it. Yet another super fast and easy meal idea!
