MEATLESS MONDAY : RAW VEGAN CHOCOLATE MOUSSE CAKE

I made this cake for the very first time for our Xmas dinner this year and was surprised how quick and easy it was. I don't think I ever need to make any unhealthy, sugar and butter laden, baked cakes again. Crust is super simple and for the topping only your imagination is the limit. Try for example strawberry whipped cream or lemon meringue filling if you get tired of chocolate.

Crust: 

1 cup cashews
1 cup almonds or walnuts
1,5 cups dates

Pulse the cashews and almonds/walnuts fine in a food processor, then add the dates and process until it begins to stick together. Press into the bottom of a small spring form pan. Put in the fridge. 

Mousse: 

2 avocados 
1/4 cup melted coconut oil 
3 tablespoons cacao powder 
2 tablespoons maca powder 
1 teaspoon vanilla powder 
3-4 tablespoons raw honey or maple syrup
1 tsp cinnamon
Pinch of salt 

Blend or process all the ingredients until smooth and thick. Spread evenly on your crust and refrigerate for 3 hours- overnight. Sprinkle cacao nibs and bee pollen on top. Or walnuts. Or goji berries. Anything pretty goes.
