Happy Meatless Monday! This time I'm sharing my favorite healthy sandwich recipe. I recently discovered Ezekiel bread and fell in love. I've always been a big bread eater, although recently reduced my gluten intake drastically. So whenever I enjoy bread now I make sure it's the good stuff. Ezekiel uses only freshly sprouted certified organic live grains and absolutely no flour, GMO's, refined sugars or anything artificial (no preservatives or shortenings).

2 slices of toasted Ezekiel bread
Your favorite hummus
1/2 avocado (marinated in lemon juice so it won't turn ugly color)
I served mine with heirloom cherry tomatoes and kimchi.
