Tacos have been our easy weeknight dinner tradition for years because of the unlimited possibilities with what to stuff them with. Chopped raw onions, tomato, beans, lettuce, bell peppers, olives, sweet corn, maybe some Trader Joe's soy chorizo for me and some chopped chicken for husband. You can also use tempeh, barbequed eggplant, tofu, seitan, cauliflower and so on. Here I also used some red cabbage since I like a good crunch. And I love raw cabbage. Always did.
