 It was a good week (despite the cold/flu/whatever it was/is). I worked only one day (Monday), we stayed in the city overnight at the Empire Hotel, met few friends I haven't seen in a while and accepted a new job! So goodbye my old West Village basement office and hello (again) cut throat Midtown! And I'll have money again! Been planning clever ways to use it. School, travel, slr camera, video equipment and so on. Maybe also a hair cut, spa day, yoga retreat, classes and some educational courses (cooking related probably).

This weekend is husband's birthday so we got something fun planned. We're not going to let the rain ruin it!

 I've always thought Valentine's Day in the US was overly commercialized and cheesy, but having spent eight Valentine's Days with my man I've started finding the purpose in it. It's like a second anniversary where we do nice things for each other. I cooked dinner (spaghetti, spicy tomato sauce, garlicky spinach and asparagus), baked some interesting vegan cupcakes and cleaned the house from top to bottom. I didn't have to work yesterday so I had all day to do this without a rush. And I received some nice little gifts from my man when he got home from work.
 To make these cupcakes I used Runeberg's Torte base for the dough (I didn't have crushed almonds so I used flax seeds instead) and for the frosting I just eyeballed and threw some raw cashews, water, powdered sugar, dark chocolate (74% cacao) and raw, organic cacao powder in the blender. For the white decorations I just used paste made from powdered sugar and lemon juice.
Hope you had a nice one whether you spent it with your lover, friends or by yourself. The key is to enjoy it.  I have some work related changes coming my way starting March, so between then and now, I'm just enjoying some quiet time, writing and planning.

low-sodium tomato juice
lime juice
hot sauce
Cajun spices
Worcestershire sauce

Start by combining first three ingredients in a glass with ice. My vodka/tomato juice ratio is just about 1/8. Add 3 dashes of hot sauce and a dash of Cajun spices and Worcestershire. Stir well (or shake like I did) and garnish with a celery stalk. For more kick add black pepper.

Although commonly referred to as a vegetable, a tomato is the fruit of the plant Solanum lycopersicum. Tomatoes are high in Vitamins A & C which means they're loaded with antioxidants. Antioxidants help fight free radicals that can lead to inflammation and illnesses.

Besides providing 2 grams of protein and fiber, tomatoes are also a good source of lycopene and beta-carotene (helps fight cancer, especially colon & prostrate) and heart disease. Lycopene is also known to be anti-aging. It helps protect the skin from UV damage. source

I'm on a serious job hunt again. Time to move forward and make some more money for a change. I've truly enjoyed going to work late at 10am and leaving between 3-4pm and having off Friday through Sunday. What I have not been enjoying so much is the lack of money. I did take too big of a pay cut with this last job. Now I'll concentrate on finding something well-paying, even if it has long days. I don't have to do it forever.
