Peanut Stew
More deliciousness from Vegan Stoner. I am the master of altering recipes, so I added my personal touch to this by adding small bits of tempeh and organic corn. And since I'm not a fan of canned tomatoes I made my own crushed tomatoes from fresh ones. We were also out of rice, so I made red quinoa instead. Either way, this is probably my favorite food. So good I can eat it every day.
Once again, so easy and super delicious!
