WHO LET THE DOG OUT?

We had a little visitor this weekend. Chewey (Chewbacka) came to say hello and stayed with us overnight. Needless to say the cats were pissed off and would not come down from the third floor. 
But they did forgive me just earlier today, so we're good. Chewey is still a little puppy and so wild, but he did calm down for few hours and lied in the yard with me enjoying the sun and good books. I'm reading Eat, Pray, Love finally...

SUNSHINE AND RAIN

It's been raining for few days, but today was beautiful. Sun finally came out. I've been enjoying hanging out with my parents and we've been walking miles after miles. They like walking and so do I, so I'm taking advantage of the time they are here. I've discovered many new areas and parks in our town and nearby towns. I forgot how I miss walking in the parks like I used to do in Finland all the time. Here I've just stopped doing many of the things I used to love to do back home, and walking is one of them. Walking can relieve depression, anxiety and stress. Just one 30 minute walk may make you feel better when you're down. It also totally clears my head when I'm walking alone. It's like after a long walk I've rebooted my brain.

GREEN SMOOTHIES AND ENCHILADA CASSEROLE

My parents are in town for ten days so I'm trying not to spend too much time on the computer. That's why I've pre-scheduled few postings that will pop up during my vacation time. It's just too nice out and we don't have too much summer left, so I'm trying to really live it up and do tons of outdoor stuff.
This is how I start my day every single morning. My green drink. I blend together one whole banana, 1 tblsp greens powder, 4 tblsp hemp protein powder, 1 tsp spirulina, 1 tblsp maca powder. For liquids I use  organic almond milk, coconut water or sometimes both. I know it doesn't look appetizing and doesn't taste that great, but it's ok as long as it does good for me. I gave some for my mom and she actually said she liked it. 
Miina and Moses are happy to see their grandparents again and the grandparents are happy to see their little furry grandchildren and you know what that means; extra lot of loving and treats.
As I've said before, I love to order everything from Amazon and that's where I normally get my powders and other health stuff as well. I just got another order of Organic Hemp Protein Powder, Organic Maca Powder and Organic Raw Coconut Oil. I use this oil for cooking as well as for my hair and scalp for moisturizing mask before washing it out (sometimes overnight) and for my skin. Like the wise people say, you should never put anything on your skin that you cannot eat. Skin is your largest organ and all the toxins and chemicals you use on it go straight to your bloodstream. 
And last but not least, my new favorite quickie healthy recipe. It's so easy to make, tastes awesome and I ate the whole thing alone in a day (sorry honey). I found this recipe at Trader Joe's (one of my favorite stores) and made it fit for me by removing the meat and adding vegetables.

W.O.W. Enchilada Casserole 

Olive Oil (for pan) 
1 bottle Enchilada Sauce (I used taco sauce)
1 package frozen corn 
handful of cherry tomatoes
6 TJ’s Green Onions, sliced, green tops preserved for garnish 
2 tbsp Sliced JalapeƱos, minced 
1 can Sliced Black Olives 
1 package Corn Tortillas, cut into strips 
1 package Mexican Shredded Cheese Blend 
2 Avocados, sliced 

Pre-heat the oven to 450°. 
Swab bottom of a baking dish (appx. 8” x8”) with olive oil & a small amount of enchilada sauce; set aside. In a bowl, mix corn, green onions, jalapeƱos and 3 tbsp of sliced olives together with a small amount of enchilada sauce. 

Cover bottom of dish with a layer of tortilla strips. Top with half of carne asada mixture,  followed by a small amount of sauce and about one-fourth of the cheese. Repeat second layer in the same order. 

Top second layer with strips of tortillas, remainder of sauce and remainder of cheese. Garnish with remainder of olives and green onion tops. 

Place in oven and bake until cheese is melted, the edges are browned and sauce is bubbly; about 20-30 minutes. Remove from oven and sit for 10 minutes before cutting. 

Top with slices of Avocado. WOW! Enjoy. 
Serves: 6-8

GOALS

I can't believe it's already August! Even I've gotten lot of things done, there are few important things that need to get accomplished before the end of the summer.
I need to start doing yoga actively. Find a studio or two around where I live and commit doing it.
Jogging. I hate jogging so much, but I'm 100% positive that if I keep doing it for a week or two I'll eventually learn to like it and hopefully get addicted.
I need to find a new job. It's just getting so hard to get up in the morning.
Cleaning schedule. Or a cleaning lady... This house is too big for me to clean up and it's starting to show. Ideally I would just hire someone. But there's a big question of trust and privacy, so maybe I'll first try to make a schedule for cleaning so that everything doesn't fall on the same week.

BREAKFAST AT KATZ'S

Yummy breakfast with my bff. I'm truly never alone.
Apples, blackberries, blueberries, plums and cherries. And of course before I had anything else in the morning I had my alkalizing cocktail of spirulina and greens powder.
It was such a hot day that I felt bad for the kitties and gave them both a refreshing bath. Poor Moses.
What a fun way to exercise! Rebounding has so many health benefits and during the summer mornings I like to take my mini trampoline outdoors and get my bounce on. Research has led some scientists to conclude that jumping on a mini-trampoline is possibly the most effective exercise yet devised by man, especially because of the effect rebounding has on the lymph in the body. Get jumping already!

One day after work I decided to walk around the West Village and ended the walking tour in Washington Square Park. What a hot day. People cooling off by the fountain and so was I. 
Once the heat got the best of me I escaped to the nearby Thai place for a light snack and lychee martini (at Boyd Thai).

BEACH ESSENTIALS

Good readings. Preferably something educational. Superfoods by David Wolfe is a classic and lighter reading is provided by SELF magazine.
Safe sunscreen for body and face. I love bare Minerals' natural sunscreen in the form of mineral powder. I can easily touch up any time without greasy mess on my face.
I looove hats, so big sunhat is essential for style and protection from the sun. These bikinis are already few years old and from Victoria's Secret, but still my favorites. Other necessities include Ipod (my latest purchases include Sade's Soldier of Love and Erykah Badu's New Amerykah) and a bottle of wine. :)

EASY LIKE FRIDAY MORNING

I love Friday mornings. I'm off, hubby usually works from home and I let the kitty cats to wake me up little later than normal. Since nobody went to the supermarket yesterday I made breakfast from leftovers; mac & cheese, stir-fried veggies, indian lentil sauce and pickled beets. What a mix. But it was good.
